LEACH FARMS FROZEN CELERY SPECIFICATIONS

General Description

 

-prepared from clean, sound, succulent, and edible fresh stalks of the celery plant (Apium graveolens), is trimmed, properly prepared, processed, blanched, frozen, and stored at temperatures necessary for preservation, according to cGMP and government regulations

-predominately green with normal color distribution, typical of healthy field run celery

 

-typical of blanched celery, firm and practically free of tough, stringy, or fibrous units

-typical of frozen celery, free from objectionable flavor or odor

- practically free of defects due to mechanical damage, discoloration, insect and disease damage, rust, butt ends and roots

- IQF and free flowing

-blanching temperatures are monitored and chart recorded continuously
-technicians document temperatures hourly & verified by QA Manager daily
-Peroxidase test -negative with no color development prior to 3.5 minutes
     * to date no positive results

-testing done by a third party laboratory accredited by The American Association for Laboratory Accreditation
