LEACH FARMS FROZEN CELERY SPECIFICATIONS

General Description

Prepared from clean, sound, succulent, and edible fresh stalks of the celery plant (Apium graveolens), is trimmed, properly prepared, processed, blanched, frozen, and stored at temperatures necessary for preservation, according to cGMP and government regulations.

Physical Requirements

Color Predominately green with normal color distribution, typical of healthy field run celery.
Texture Typical of blanched celery, firm and practically free of tough, stringy, or fibrous units.
Size Sliced (1/4”, 3/8”, ½”, 3/4",  1”) or diced (1/4”, 3/8”, ½”) with a predominance of the size being prepared.
Flavor / Odor Typical of frozen celery, free from objectionable flavor or odor.
Defects Practically free of defects due to mechanical damage, discoloration, insect and disease damage, rust, butt ends and roots.
Clumping IQF and free flowing.

Size 1,200 lb tote or 45 lb case
Material Corrugated cardboard with blue food grade poly liners, liners folded over product, slip sheets protecting shipment, and new wood pallets.
Label Labeled with Leach Farms and address, the ingredient name, product code, lot number, production date, and net weight. Additional information upon request.
